When people use the word dry, they are referring to the fact that it is not sweet. Dry wine is exactly the opposite of sweet. Dry is more a texture, while sweet red wine is an actual taste.

 Whether a red wine is sweet or dry is determined during the fermentation process. This is where the innate sugar of the grape is converted into alcohol. If the winemaker is producing a dry red wine, he or she will allow the process to run to completion. This means that the wine is successfully converted from sugar to alcohol.
